I run mini-Vs with Dia Compe 287v levers on a roadish hybird set up with drops. Works great.
On a Trek 800 you might want to consider a brake booster on the rear stays. The fork is beefy enough not to flex.
I did this on my daughter's Trek 830 when I converted it to Vs.
