Ultegra BR-6700 Brake Compatibility Question

Has anyone tried these with other than Shimano 6700 brifters and with what results? Shimano's documentation states that the brakes are too sensitive with other than the servo wave brifters.

Wondering how they would work with normal drop bar brake levers or even V brake compatible drop bar levers. I would presume that the V brake levers would reduce the sensitivity due to the lower lever ratio and greater cable pull for a given lever movement.

Originally asked this in the road forum and only one response that made sense but it did not answer my question.
