Just out of curiosity, what kind of riding are you doing? I put 2.5's on a DJ bike once, and they were crazy heavy. I have no doubt that for certain applications, fat tires are great, but I'm not sure a 1x1 is the best for many of those applications (other than sand maybe?).
How much travel are you looking for? Air or coil? And what kind of drop outs? A Marzocchi Dirt Jumper will take a fat tire, but it's not a light fork or something the majority of people would want to use for general trail riding.
