I despise the West end of Nohl Ranch because it's so beat compared to other hills in the area. That and its start at the end of Lincoln is less than a warm-up from where I stay. Meats is a decent alternative to the worst of it, up or down.
The resedentials that connect up the arterials and secondaries in the western part of Anaheim Hills are the best bet for climbing. Just do a little Google Map check to get an idea of what connects up before going.
