I agree totally: the ones I make have almost no mayo (and what I use is the low fat type), real breadcrumbs (real whole grian bread, no wonder bread), egg, and I fry them in a LITTLE olive oil (don't forget the old bay and taasco). That said, they are still fried, but due to the cost of good crab backfin meat, we don't have them enough. The pre-made crabcakes you buy in your local grocery stores are not crabcakes at all. Mostly just fried bread crumbs, grease and a very little crab meat of dubious origin.
