Well I am not advising you on your day off situation but your activity schedule is way too much. I used to do some tri's and was on a club. The coach would never have us even the pro's doing all 3 things on the same day. Pick 1 maybe a couple times a week do 2 workouts like morning swim then before work run. Concentrate on 1 thing per day. If you do any long distance either run, bike, or swim make sure the other activity is short and easy effort. I can see why you are not seeing the results you are pushing yourself into over training. You need to back off. Unless you have been training for many years you would see results from tweaking that schedule down. Those 2 days off for sure do nothing you need it.
