Dog.breath, I'm mostly familiar with the offroad MTB stuff. If this is what your looking for the best book I've found is Off the Beaten Track by Jim Parham. Very detailed book, mostly singletrack trails but there are some fireroad rides in the book as well. You may also be interested in Sorba.org, the Southern Offroad Bicycling Association... I'm still looking for the touring info though, and I'll pass it along as I find it. I do know that the Cohutta Wilderness Area is very spectacular. You could do some sweet forest road riding/camping in this area....Hope this helps!
