Different places have different customs, so pardon me if this is a silly-sounding question: is Quebec "open" on Sundays?

I grew up near a town in NJ that had some pretty strict "blue laws". On Sundays, most merchants were closed; grocery stores closed very early; there might be one pharmacy open.

I'm planning on riding from Montreal to Quebec City, leaving Montreal on a Sunday. Will I be able to find food along the way?

A related question: are there public toilets along the Route Verte, or are things handled on the US-style plan (restaurants have bathrooms for customers only)?
