That's exactly what I've done. I took a junk hub and cassette and use it in place of the wheel to give the chain a place to run on while cleaning it. Pedros and a couple of others make commercial versions but mine was free.

A lot of frames come with a brazed or welded on peg on the seatstay above the driveside dropout. It's there to drape the chain over while the wheel is out but I would never turn the crank while it's hanging there.
