I would use fenders. You might have enough room for a water bottle cage behind the seat tube if you can find the straps that they used to use before braze ons for bottle cages became prevalent.
Mixing a V brake front and cantilever rear, do the front and rear brakes take the same amount of pressure for even braking or not?
