I love the Newport Coast options, but that is only a few miles from me. Thursday I did a ride I call "The 3 Faces of Newport Coast". I came up Newport Coast from PCH, then when up and over Ridge Park/Vista Ridge and back down. Then rode around and when up San Jaoquin Hill and up and over Ridge Park/Vista Ridge again. Back down SJ and around Bonita Canyon before going up Newport Coast from East to West followed by a 3rd and final climb over Ridge Park. Total trip length as 54 miles. I don't know about altitude... MayMyRide says 3000 feet, Google My Tracks says 4200.
