new wheel questions (dish and cassette questions)

I'm getting ready to replace the wheels on a Soma cross that I use as an all purpose around town bike. I have it set up currently with a 7 speed rear cassette, ultegra bar cons and shimano derailleurs. The rear triangle spacing is right between 130 and 135 (so you can use either). I have two questions:

(1) I take it that everything else being equal, I should opt for a 135 mm rear wheel since presumably that means somewhat less dish?

(2) I'd like to keep the bike at 7 speeds since I don't want to change out the shifters and rear derailleur (both of which are working fine). Plus the 9 and 10 speed stuff is crazy expensive for a kicking around bike. I take it that if I put the right size spacer behind the 7 speed cassette, I'll be good to go?
