Show us Your Touring Bike: With Non-Drop Bars: Trekking, Swooped Back, Etc...

I am in the market for a bike that will likely come with Drops.

I am interested in getting a proper fit for not only the drops that come with it... but some other alternatives, mostly for variation when I feel like being in a different riding position... swapping a stem to raise the bars, add some Nitto Albatrosses or Trekking Bars. Surly (despite not feeling 100% about the way the drops felt) is high on my list.
I may also add some brakes under the hoods for when I sit more upright. That might help me feel more secure on the bike not having to bend as much in order to brake all the time.
