I'm sure you'll get 100 different opinions/suggests on this. I don't know if there's a track specific saddle. I'm currently using a Fi'zi:k Aliante saddle and have absolutely no complaints or discomfort. Every saddle is going to fit every body type differently. I use an Aliante on my track, road, and mountain bike and love it. Most bike shops have a saddle demo program. I'd suggested trying out every saddle you can. You can gather info online regarding saddle width, length, etc...and get a rough idea based on your build and go from there. Don't judge too quickly in the very beginning as saddles break in over time. But you'll have a good idea based on the pressure on your sit bones and other region. Also, at least for me, I can get a good idea of likable saddle shape/design if I spend a lot of time shifting up or back on the saddle to stay comfortable. Good luck shopping!
