Hmmmmmm, a pastel blue would at least match the paint panels better, if that's what you are after. I'd go with black. Bar tape should be cloth black, end of story.
As for the saddle, no one can see it when you're sitting on it.
Admittedly, the white/white combination looks pretty good on those other pics.
