The only way I can do it for any amount of time on a freewheel bike is to have one foot on pedal facing forward, front wheel twisted to that side, other foot on the front tire behind the fork. That way you can adjust like you would on a fixed drive train and even go no hands. Sounds silly, sure, but I'm certain I'm not the only person to do this.
