Ortlieb Classic Rollers are the gold standard for panniers -- durable, waterproof, easy to install and remove, hold a lot of gear, and relatively inexpensive considering their virtues. They also come in all sorts of colors. Easy to resell if you decide that you don't like them, which is unlikely.
