If your wheels are going out of true from bunnyhopping, there's probably something wrong with them, like uneven spoke tension or a lack of it altogether. Running your tires too low and bending your rims is another way your wheels could get jacked up. Don't try to true a bent rim. If spoke tension is uneven when the wheel is straight, your rim is bent.
