Here's three that show up for Northern California. Zach Kaplan is a frequent contributor to bentrideronline on technical issues about recumbents. His shop also receives a lot of praise from posters there. I'm not a CA resident and have never been to any of these shops. Might be worth giving them a call.

I have a friend who rides a Velotechnic short wheelbase suspended recumbent bike. The price isn't cheap but he sure loves it. It wasn't unusual for him to do 50 or 60 mile rides on the weekend when he worked in So Cal for a time. The Bike E (AT model) was my first recumbent. I can guarantee you that almost any recumbent bike will be more efficient than it is. I went from that to an old long wheelbase Linear and my mileage and speed increased a whole lot.
