6'1" and 162lbs and I use Castelli Medium "Aero Race" jersey, but you're right, they are a little short so I make sure I'm wearing bib shorts with that jersey rather than regular shorts. I have 2 sets of tan lines on my arms, one from Castelli, and one from everything else. No big deal to me.
I also have a Castelli Large Aero Race, which fits well too, but a bit more wrinkly.
My Hincapie mediums are longer and fine to wear with non-bibshorts, but the race cut Hincapie I have is still a bit flappy.
