Don,

I ride a Rans V-Rex, very different from the TE world but I'll offer some thoughts anyway. I don't know a single TE rider who is not absolutely delighted with their bike. I ride with one friend who rides an EZ-1. I think the EZ-1 Lite is a great bike for $750. It has better components and a lighter aluminum frame than the EZ-1.

For visibility my EZ-1 friend has a tall flag - bike shops have them. It appears to me the Easy Racers products offer a bit more upright position and that would seem to be an advantage if commuting in traffic. I don't ... just pleasure riding in mostly rural areas. Commuting in traffic on my SWB bike would be more challenge than I would want because of the higher pedal position and more reclined seating position. If I were going to commute I would buy an EZ-1 Lite for that purpose.

Buy all the bike you are financially comfortable with, you are right to wonder if you will outgrow a bike.

Give yourself TIME to get used to whatever you buy.
