You will need aero brake levers in order to route the cable under the bar tape. $40 and higher on eBay for Shimano 600 although hoods can be a challenge. You can also go with something like Dia Compe or Shimano Exage aero levers which are usually cheaper.

Or you can not mess with a good thing and show those cables with pride
