An ideal map would make these things clear:
How many lanes does the road have?
Does it have a shoulder?
Is it paved?
There is currently no online map interface, at least to my knowledge, that answers any of these questions consistently and accurately.
So if you're building something for bike tourists, and it's a small enough scale to mine all the data, make your own!
