Panniers for Tubus Airy

I'm finally wanting to get a rear rack. I carry my bike up two flights of stairs at home, so I want I've been avoiding it do to bike weight. But here I am looking at the Tubus Airy. It only weighs a half pound and carries up to about 60 pounds.

I'm new to panniers. I'm confused by the specs listed for the Airy:
The Airy is only compatible with the Ortlieb-Pannier-Model ''Backroller'' from model year 2007 on.
The ''Frontroller'' fits yet. Don't fix bag holders on your Airy/Carry, which have to be clamped onto the rack (like an Ortlieb bag-adapter for example)

Can anyone interpret this for me? I want to use your standard everyday panniers and grocery panniers. For instance:
Minnehaha Grocery Pannier - Bags and Panniers - Accessories
or https://northstbags.com/collections/...nt=24605164741

But I don't know if the Airy works with regular panniers. Thoughts? Knowledge? Experiences?
