I think it comes down to confirmation bias. People who buy bibs like them because they paid a chunk of money for them. And because they see people who are bike racers wearing bibs, they want to look like like they race, too. It all comes down to 1) wanting to fit in with the crowd you run, I mean ride with, and 2) succumbing to marketing by the people who make bikes, bike clothing and bike accessories.

Pros are almost always on skinsuits nowadays. Why is hardly anyone wearing skinsuits, if people who buy bibs only do it to look like they race?
As far as I know most of those brands (and their evil marketing departments) that make bibs also make shorts.
I think the only valid explanation so far is that all bibfans are fat.
