Thanks! Question on the dishing was simply because the wheel looked pretty symmetrical once the freehub came off, at least compared to all my freewheel bikes.

Another possibility is to try an older LBS to see if they have any damaged 7-speed wheels or the hub retrieved from a such a damaged wheel in their spares boxes. You may get it free or at nominal cost. Transfer the freehub body from the old hub to yours. That way you also get the driveside cones and seals that match the replacement freehub body.
Yeah, I'm going to stop a few places that I think may have such a thing on the way home first. Ordering parts every step of the way when the next thing doesn't fit is getting annoying...
