www.parktool.com and Shimano's exploded view docs to learn. It's not that hard, I mean I don't adjust gears and stuff very often so I forget which screw does what. It just takes a few minutes to find out! It does take a bit of fiddeling and it certainly takes a lot longer time than it does for the pros but it makes you feel good to be able to sort your own gear out.
