Stainless cost a little more but are worth it because they don't rust.

The cables are specific to your components (e.g. Shimano or Campy or SRAM, etc.).

They are not expensive. E.G., Shimano Dura Ace brake cables are only about $10.00 a pair.

Often when you need new cables, it is a good idea to change out the cable housing as well. (Also not very expensive).

Lube your cables before installing.

When cutting cables to size after installation you will need a good quality cutter or dremel.

Before cutting the cable make sure the brake caliper adjusting barrel (if you have one) is screwed in about 1/2 way, unless you replace your brake pads at the same time, in which case you should screw the barrel in all the way.

After cutting the cable you need to cap it with a crimp-on cable-end to prevent fraying.

The Park Tool website has great instructions on this, and other bike repairs.
