From your description the easiest repair would probably be to replace your shifters. Replacements aren't too expensive.

Look at your rear derailleur. If it says "Grip Shift" on it, you need ESP 7-speed shifters. If it says "Shimano" on it, you need MRX 7-speed shifters. New shifters will come with new cables already installed in them which eliminates the hardest part of the project.
