but, careful... I have a friend that's a chef and she cooks with all natural ingredients but she has a very heavy hand with regard to oil, butter, salt etc... and though her food is delish, it's heavier than it could be... if Im following recipe that is followed by nutritional info, I am sure to measure things like oil...

If a recipe calls for 2 Tablespoons oil, unless it's baked goods (which is like chemistry), I'll only use 1 Tablespoon of oil... it's not missed at all.

I've been able to use the FitDay.com website to calculate recipe nutrition as you do, a full tally then dividing by serving sizes... seems a good guesstimate
