its been a couple years since I was up there but when I lived in the twin cities alot of my riding was on the south side-burnsville, eagan, bloomington all have trails though they are mt bike trails not the paved MUT type. if you're seeking MUT(multi use) type trails head to the lakes(calhoun, nokomis, harriet etc) in minneapolis and hook up with the trails there. If youre going to be on 55 youll be fairly close to minnehaha falls, definitely worth seeing and connected by trail to the lakes area. since Ive left the area theyve also completed a trail that runs from downtown to the western suburbs that might be a pleasant ride. check the commuter board here as Ive seen it discussed previously. there had been some bike jackings or something on that trail so maybe choose your hour wisely if you do ride it.
