It is freaking hot today even for Gainesville, FL, in the summer. Looking for a "cool" dinner.

I made a chilled tomato soup this afternoon (lots of ripe tomatoes, low fat and low sodium chicken stock, vidalia onions, carrots, olive oil, garlic, thyme, bay leaves and several stages of Cuisinart runs) as well as a cucumber/dill/sour cream sauce that will go on poached fresh flounder. The salad will be chilled tomatoes, hothouse cucumber, and basil with an olive oil drizzle.

delicious!

Last night I made this recipe that I found on the back of a Sprouts chicken broth package. Tomato/broth based stew with chicken, garbanzo beans, onions, garlic and zucchini. Served over couscous (buttered ofc) with a cilantro garnish. Yum!

It's spiced with cumin (my fav), salt, pepper and cinnamon, of all things. It's so good.

Package of cubed beef, can of chickpeas, couple of sweet potatoes cubed.

Cook beef with garlic, cumin, coriander and turmeric in a few cups of water, after browning the beef. Then throw in chickpeas and sweet potatoes after an hour. In another 25 minutes or so, it will be done. Inexpensive, high in calories, and it's the best stew I've ever made.

Got the recipe from the NY times cooking website, it calls for lamb and butternut squash, but this was easier to make.

yeah i'm thinking of trying it out for a bit. mostly just to see how i like it/switch it up a bit. any good blogs/resources for meal ideas? mostly just worried about eating too much soy products (tempeh, tofu) trying to get my protein in. i already use pea protein for post ride recovery.

Why not vegetarian? That way you could at least have eggs to help bolster your protein in take a bit.

I've been vegetarian since age 10. I'm mostly Vegan when it comes to food but not the complete lifestyle (shoes, clothing etc). The number one question I get about my diet is "where do you get your protein?". I honestly don't know. I stopped eating meat, fish and dairy at age 10 (over 30 years ago!!). Somehow I managed to successfully compete in high school sports, have 2 healthy babies, raced in triathlon and made it to a cat 1 cyclist. I'm rarely sick and have no problem recovering from workouts. I assume I am not protein deficient. That said, if I think about it, I get most of my protein from nuts, beans, seeds, quinoa and vegetables. I rarely eat soy products or those pre packaged veggie burgers etc. I really like Vega products. I drink a shake after my morning ride, there's a few flavors of the Vega One shake and there is also a protein & greens shake now. I mix with almond or coconut milk and banana.
My favorite cookbook is Vegan Planet, I use it all the time. I make stuff the whole family likes and sometimes just add meat to my kids plates (they are carnivores lol).
Couple good websites are No Meat Athlete and The Flaming Vegan (great recipes).
The guy who created Vega, Brendan Brazier, is more of a raw vegan. His website and books were a bit hardcore for me.

Serum concentrations of vitamin B12 and folate in British male omnivores, vegetarians, and vegans: results from a cross-sectional analysis of the EPIC-Oxford cohort study

Results

Mean serum vitamin B12 was highest among omnivores (281, 95% CI: 270-292 pmol/l), intermediate in vegetarians (182, 95% CI: 175-189 pmol/l), and lowest in vegans (122, 95% CI: 117-127 pmol/l). Fifty-two percent of vegans, 7% of vegetarians and one [0.4%] omnivore were classified as vitamin B12 deficient (defined as serum vitamin B12 < 118 pmol/l). There was no significant association between age or duration of adherence to a vegetarian or a vegan diet and serum vitamin B12. In contrast, folate concentrations were highest among vegans, intermediate in vegetarians, and lowest in omnivores, but only two men (both omnivores) were categorised as folate deficient (defined as serum folate < 6.3 nmol/l).

Thank you for all the help! I should clarify that this is definitely just dietary veganism and that I rarely eat meat as it is. Maybe once or twice a week at home and if I go out. And on second thought, after counting up what I ate today, I probably do not need to be worried about protein. It looks like nuts and beans have lots of zinc and my daily multivitamin has b12 (yes, I know multivitamin sources of b12 aren't the best - anything else I should look at?). Will definitely check out vegan planet and I've already been browsing no meat athlete

nope, none.
I use vegan protein powder (pea based), but I've never noticed a significant protein deficit or side effects from it in my life.
