You mean single speed? I've seen SS MTBs converted using a multi-speed cassette and spacers on either side of the desired cog. You can also thread a ****ty single speed freewheel (like the one I posted a picture of above) onto an older hub or one of the newer flip flop hubs. Fixed Gear MTBs would use a track hub with a cog and lock ring. Or you could thread a cog onto a freewheel hub and loc-tite a BB lockring onto the hub to secure the cog. But that's waaaay ghetto.
