I have seen the redline conquest sport cyclocross bike for as low as $599 at a seattle area bike shop. Seems like nice fast ride that could handle some rough limestone paths, but singletrack would be pushing it.
Craigslist will have a lot of good older mtn bikes under 500 and you could throw 1.0 or 1.5 slicks on there and it should be pretty fast and durable.
