I have both versions of the 287's. I've used 287-V's on standard cantis on my tour/commuter bike with no problem......except for a slightly less mechanical advantage, but the lever action was crisp and solid, and braking performance was good. Actually, the 287's with V-brakes kind of felt a bit mushy for my taste.
I think using the 287-V's would work for your particular application.
