As far as I know stiffer is better for power transfer and control, but less comfy so steel flexes more and you lose a little power pedaling out of the saddle, but it is more comfy and aluminum is harsher but it'll flex less. I think the comfort level is more noticeable than the power/control factors. I could be wrong about all this though since I've never really researched it - just from personal experience. Never ridden CF, but I hear its stiff and comfy.
