I'm not familiar with all of them, but I think most people who have the 7.3 seem to like it. The Deore components look fine, and the 7.3 has somewhat lower gearing than your typical road bike which you might like if those hills you mention are especially steep. I'd guess that bike is definitely a level of quality above the others, but I understand being price conscious.
The others all seem about the same price range with somewhat comparable components so it's hard to judge.
Don't know what the used bicycle market is like in your area, but that can be a great option for some people (like me!).
