Is anyone using Mavic Elites for cross racing

I'm new to CX racing and recently purchased a 2007 Kona Jake the Snake for CX racing. The wheels are Mavic Open Sports with a 105 and a Deore Hub. The Tires are 700 x 35 Maxxis Locust. The wheels are very durable but heavy as a brick. I have a set of Mavic Elites that have a lot of miles (about 13000) on them, so I really don't care what happens to them. The Mavic website doesn't recommend using a tire over 700 x 28 on the rims. I usually run about 40 to 45 psi in my tires, and I weigh about 195 lbs. Can I get away with using the maxxis tires on the elites or is it a bad idea. I really want to use a slightly lighter wheelset, especially since it has been so dry and fast during our cross season. Eventually, I'm going to purchase a set of open pros with 32 spokes front and back on a dura ace hub, but I don't have the cash at the moment.
