It all depends on the weather... in the TX heat I would fill two water bottles and my 70oz Camelback when we did our murderous 30/30 rides, which were 30mi of intermediate/expert singletrack and then a 30mi road ride on our MTB's. I slept good those nights. But water, yeah, you can never have too much of it.
