Rivendell is the first bike that comes to mind because I really, REALLY want one.

Hybrid: Giant (because I own one)
Touring: BruceGordon
CopyCat bikes: Trek
Campus Bike or commuter in high theft area: Huffy/Roadmaster/etc.
