Yes, you can.

And as you are aware, you will need to replace all threaded headset associated parts with threadless (or Ahead-set) parts. (ie upper & lower races, fork crown race, etc.)
The only caveat is to know what size you are starting with - either 1" or 1 1/8" - I'm lead to believe finding 1" threadless parts is getting more difficult.

Ask your LBS or bike-savvy friends for what's involved.
