accelleration is based upon the ratio of your chainwheel AND your rear hub's chainwheel/cog etc so for example i run a 30t chainwheel and my back wheel is 11t. my ratio is pretty standard, you can google bicycle or bmx gear ratio chart and find more information on that subject.
Cranks are essentially the pieces that connect your pedals to the frame and to each other, usually referred to as "arms", you'll learn a lot about different bike parts simply by going to an online retailer like danscomp or albes and sifting through the sections on there.
If you post what kind of bike/parts you have maybe we could give suggestions on where the easiest or cheapest places to improve would be etc.
Cleaning your bike is not so essential as keeping all your bearings greased and everything tightened(not too tight) But of course wiping it down every once in awhile is good, just a dry cloth or anything u want is good, I personally never use anything but a damp cloth at most.
