Marfans has some specific risks, since it's a connective tissue disorder, but at 180 and 6'3", you will still be at the bottom healthy range of weight, however, since you've dropped from 300 pounds, you will have about 15 lbs of excess skin to factor for as well, since the extra skin you grew to cover you at that size doesn't go away.

I'd place your minimum weight and have decent muscle volume at 195, at a guess.

As to weight training, you may get better results from low intensity elastic resistance training rather than free weight training, since you have Marfans. It will strengthen your connective tissue in the joints and muscle/ligaments surrounding the joint capsules without weight stress on them. Definitely keep an orthopedist in the loop as well, and make sure that he is current on training and safety requirements for a person with your condition and how to maximize your results rather than discourage you. I'd also suggest a physical therapist who specializes in exercise kinesiology as well to prevent injury to the maximum extent possible.
