The finish is better and they may use a better grade of steel or better heat treatment as you go up the cost structure. The higher line cassettes have some of the cogs nested together on spiders so they weighs less and the very top of the line (Dura Ace and XTR) have some of the large cogs made of Ti so they save additional weight. Functionally, they are all pretty much the same.
