The problem is you're building a bike that you don't know if your girlfriend is going to like. Sure, she will think it is very pretty, but everyone should be familiar with riding fixed before putting a ton of money into buying one. Fixed gear isn't for everyone, just make sure that is what she really wants so you don't just end up posting the bike on craigslist after it sits in the garage for a few months.
