I don't take them off, but I also don't usually ride the touring bike unless actually going touring. I guess if I lived somewhere that was really dry and I only had one bike I might take them off.

The toe overlap thing is a complete non issue for me. I bump the tire or fender once or twice on a new bike and just automatically adjust. After that I never even notice. I guess I am lucky that way.
