OK, so to bail do you just do a sideways slide and hop off before your down legs scrapes? Does it just come naturally, you know, without thought?

Yep, a few times.
I live in a rather hilly part of the country, northern Arkansas. I ALWAYS ride with a mirror attached to my sunglasses. When meeting traffic, you have to watch behind you, as someone can come around a corner, and not have time to slow down.
Only once this summer have I encountered a very rude driver. I was meeting a string of traffic, I see this guy coming up behind me, not slowing down, he then blows his horn, I see he's not slowing, so I hit the ditch. Didn't wreck, just ran off the road.
Last year, I was riding across a bridge, traffic coming, some idiot decided he needed to pass. I pulled to the side of the bridge and grabbed a hold, as me went by me.
I've never crashed, but do get off the road occasionally.
