Touring - Newbie wants to tour Portugal/Spain...help

It's time for this dad to take a break and get some air! Interested in touring above countries and could use some help as far as sights to see, scenic routes, and maybe join someone or group. I am pretty flexable, but like June or July. I would like to buy my bike upon arrival. My thoughts are a mt. bike, change out the tires to a road tire, add a rack or two, and give it a go. I find I prefer riding my mt. bike over my road bike because of wider tires, suspension, and riding position. Am I missing something by going this route? As I am 6-2, 220, I just feel more stable on my mt. bike.
If anyone is interested in visiting N. California, I am very willing to help in any way. I live in Sacramento and there is a great 25 mile ride (bikes only) which follow the American/Sacramento Rivers. Also a must see is Hwy 1 along the N. California coastline.....beautiful.
Appreciate any and all ideas!

Do you speak Spanish?
Buying a bike can be a very personal thing, fit, style accesories etc. and if you don't speak the language you will encounter some probs. The sporting goods stores abroad are as good as in the USA,bikes are pretty much the same as they all come from China or Taiwan, and are the full range of prices
Taking a bike abroad isn't that bothersome, and not costly, it goes free as part of your baggage allowance
Do you have a def departure date?
I'm planning a trip to Spain, spent 10 weeks in Europe last year had a great time, and wouldn't mind traveling with someone this year,speak a bit of Spanish, have Trek and camping gear, will do some Hostels and Bn Bs but has to be cheap.
Have been told camp grounds in Spain are numerous and inexpensive
My route is to be Madrid, Toledo, Escorial,5 days, then by train to Barcelona for 5 days then ride west to Gibraltar doing the historical places along the way, the white hill towns,and spend maybe 2 days going across to Tangiers 4-6 weeks total

My company, Fernando Carvalho Ciclismo organises self-guided bike tours in Portugal, but is sounds like you want to do something more independent. Our tours start from EUR645 for seven days, 60 to 90 miles a day, with luggage transfer and two meals a day included and take riders on a loop round northern Portugal - www.fcarvalho-ciclismo.com - if you are interested.
