For my first conversion I'm looking at On-One's double fixed rear hub. I can't find any info on the chainline of this hub. Also, the fact that the search engine refuses to search for On-One isn't helping.

Most likely 52mm, since it's 135 spacing.

sheldon brown says the hub's center to shoulder width is 43.3 mm. Add a ~6.5mm cog to that and you're looking at a ~ 50 mm chainline

hmm.. So I guess this 50mm chainline makes the On-One pretty much useless for a roadbike conversion?

I think on-one uses same hubs as kogswell. so probably 52mm. not really good for a road conversion.
if you are after cheap double fixed hub, I would try kogswell 120mm, you can order rear only from Will @ Hubjub (http://www.hubjub.co.uk/). it has 42mm chainline. Or goldtec (https://www.betd.co.uk/product_list.asp?CategoryID=15) makes really good quality double fixed hubs, with the spacing of your choice. they are a bit expensive at £65, also they have chainline of 46mm, which works well with standard road cranks, but not so well with track cranks.

Sheldon actually lists for the freewheel hub, not the double fixed. Though it may be the same.
Both the chainline and the spacing make it difficult with road bike conversions. Surly also makes a cheap double fixed hub.
