With just a few weeks to go before my tour, I decided to change all the cables on my tourer. No problems until I tried to sort out the front cantilever brake. Instead of the cable being central it is well to the right. Help!

Is the brake centered but the cable isn't? If so you probably need to balance the spring tension between the arms. There should be an adjustment screw on the body of the cantilevers that will allow you to do this.
Is the cable off to one side and the arms aren't centered? You can slide the cable hanger to the center and the arms will be centered.

Canti's are real nice to use but not always cooperative when it comes to setup. Try Sheldon Brown's site.
